Spicy Shrimp Tacos with Chipotle Rice

Ingredients:

For the shrimp:

  • 1 lb. raw shrimp, peeled and deveined

  • 1 tbsp olive oil

  • 1 tsp smoked paprika

  • ½ tsp cumin

  • ½ tsp chili flakes

  • ½ tsp garlic powder

  • Juice of ½ lime

  • Salt & pepper to taste

For the chipotle rice:

  • 1 cup cooked basmati rice

  • 1 tbsp tomato paste or chipotle sauce

  • 1 tbsp olive oil or butter

  • ½ onion, finely diced

  • 1 clove garlic, minced

  • Salt to taste

For the tacos:

  • 6 small flour tortillas

  • 1 cup shredded Monterey Jack or mozzarella cheese

  • ½ cup chopped cilantro

  • ½ cup diced avocado or guacamole

  • Lime wedges for serving

Directions

  1. Sauté the onions: On medium heat, add olive oil to a skillet and cook onions until golden and fragrant.
  2. Add the shrimp: Toss shrimp with paprika, cumin, chili flakes, and lime. Add to the skillet and sear for 1–2 minutes per side until pink and slightly crisp.
  3. Mix in the rice: Stir in garlic, chipotle or tomato paste, and cooked rice. Let it soak up the flavor and color.
  4. Assemble the tacos: Spoon chipotle rice and shrimp onto tortillas, sprinkle with cheese, and fold in half.
  5. Bake on your ILVE: Place tacos on a tray and bake at 375°F (190°C) for 5–7 minutes until golden and melty.
  6. Garnish & serve: Top with cilantro, avocado, and a squeeze of lime. Serve warm and enjoy.
